Mexican Capsicum and Bean Salad

Ingredients
1 Red Spanish onion, chopped
2 Cloves Garlic, minced
2 Small Green Chillies, seeded and chopped
2 Red Capsicums, seeded and chopped
1 Green Capsicum, seeded and chopped
1 Yellow Capsicum, seeded ad chopped
1T Paprika
6 Yellow Squash, chopped
1T Ground Cumin
1C Cooked Lima Beans
1C Cooked Kidney Beans
1t Tabasco sauce
2 Limes, juice
3/4C Coriander leaves, chopped
Method
Heat a large non-stick frypan, add garlic, onion, chillies and 1T water. Cook 5 mins or until onion is soft. Add capsicums, squash, paprika, cumin and 2T water. Cook 15 mins or until veg are well rowned and cooked through. Remove from heat, Add beans, sauce, juice and coriander leaves, season and serve.
