Nut Toffee

A nice sweet treat, don’t even think about counting the calories! Great as a xmas present or something sweet to have with a hot drink.
Ingredients
2C Sugar
1/2C Cream
2T Butter
1/2C Chopped Nuts
Method
Put sugar, cream and butter into a saucepan. Heat gently, stirring constantly until sugar dissolves. Then bring to the boil. Make sure it has dissolved before you bring it to the boil, otherwise you will have a grainy end result. Do not stir, but let the mixture boil until the soft crack stage. Add nuts, stir gently and pour into a buttered tin. Mark into squares and cut when cold.
Soft crack stage: 142oC, test by dropping a small amount of syrup into very cold water. This separates into threads that are hard but not brittle.
