Pesto Fish

Very quick, easy and yummy dinner that my toddler loved too - its also carb free!!!!!!
Ingredients
Hoki (or any white fish)
Rice flour
Oil
Butter
Pesto
Cream
Cauliflower
Salt and Pepper
Parmiesan to serve
Method
1. Chop fish into bite size pieces
2. Coat fish in flour
3. Fry fish in oilive oil and bit of butter
4. Just as fish is cooked, pour some cream over it enough to cover the fish and add as much pesto as you like to taste - toss it around.
5. Serve on cooked cauliflower mashed with a masher and a bit of parmiesan.
