Quick Savoury Slice

Ingredients

200g Frozen Spinach
1 1/2C Polenta
1 litre water
Olive oil
Salt
Toppings (capers, anchovies, tomato, etc.)

Method

Break up spinach and add to water and salt in saucepan, bring to the boil. Reduce heat and slowly add 1C of polenta stirring continuously (Watch out it doesn’t splutter as it gets thick). Remove from heat and gradually add remaining polenta until very thick. Spread into an oiled tray and lavish with fancy toppings. Bake in hot oven until lightly browned.
