Quinoa Energy Bars

Ingredients

1C Quinoa Flakes, packed
1/2C Sunflower Seeds
1/2C Ground Flaxseed meal
1/4C Brown Rice Flour
1/2C Dried Apricot halves
1/2C Almonds
1/2C Seedless Raisins
1/2C Dates
1/2C Dry Milk Powder
1/2t Ground Cinnamon
1/3C Maple Syrup
1t Vanilla Essence
2 Large Free Range Eggs

Method

Preheat the oven to 180oC. Coat a 9 by 13-inch baking pan with cooking spray. Place all ingredients except the syrup and eggs in a food processor and pulse until the mixture is finely chopped. Add the syrup and eggs and pulse until the mixture is well combined. It will resemble a coarse paste. Transfer to the baking pan and spread evenly. Bake until just done, about 20 minutes. Cut into 20 squares.

I tried this recipie but made a couple of substitutions for things I as not able to eat.
Tastes delicious and very filling for the times it takes longer than you planned and there is no gluten free food available at the cafe. Even my husband liked them.

Can you make a substitution suggestion for the milk powder?  My son is gluten, nut and dairy free?

For the milk powder substitution just leave it out  
or add the equivalent amount of flour. The eggs are a little more difficult as they are the binder. You could add a mix of Olive oil and a dairy free spread or I make a linseed gel which is a good egg replacer although I have not tried it in this recipe. Put half a cup of water in a pot. Add 1-2 tablespoons of linseed, bring to the boil and turn off. Leave for a few minutes until the gel forms then strain if you don’t want the texture of the rest of the seed. I usually use the whole lot. Hope this helps.
