Real Custard Sauce

Real custard is worth mastering! Perfect accompaniment for those christmas cakes and pudding. mmmm
Ingredients
270ml Milk or Cream
3 Egg Yolks
1T Cornflour
1T Sugar
1/4t Vanilla Essence
Method
In a small saucepan gently heat the milk/cream until simmering gently. While the cream is heating, combne in a bowl the 3 egg yolks, cornflour, sugar and vanilla. When the cream is hot pour it in a steady steam into the cold egg mix whisking continuously. Return to the saucepan. Continue whisking while the sauce heats through and thickens. This will only take a minute or two. Grated chocolate or a splash of rum may also be added to the finished custard.
Note: You could use your egg whites to make meringues or almond macaroons.

You can get gluten free custard powder. The Edmonds range of baking products are all gluten free.
If you do decide to use this recipe, be careful with which cornflour you buy as some have wheat products added.
