Rice Patties

Ingredients
2C Brown Short Grain Rice
1 3/4C Water
1/4t Sea Salt
1-2 Cloves of Garlic
1/4C Finely Grated Carrot
1/2 Medium Onion
1/8C Chopped Parsley
1/2C Rice Flour
Method
Place rice, crushed garlic, water and salt into a pot, bring to the boil and simmer for 25 mins. Meanwhile, grate carrot and finely chop the onion and parsely. Drain cooked rice, mix with flour in a bowl and add the other ingredients. Shape into patties, lightly coat with rice flour and cook in an oiled frying pan until golden brown on both sides. These are a delicious alternative to meat burgers.
Makes 10-15 Patties.
