Simple Rice Porridge

Even my non gluten free husband will eat this one, and it doesn’t cost the earth.
Ingredients
1/4 cup short grain rice
1 1/4 cup boiling water
Method
Put rice and water (must be boiling) in tall microwave proof container with lid.Cook on 50% power for 5 minutes. Stand overnight. In the morning when youre ready for breakfast cook on 100% power for 5 minutes.
We have it with tinned peaches, LSA and yoghurt, topped with a little milk.
Not a rice fan but thought I’d give this a go. It’s really nice, enjoyed by all not just the ‘gluten free’ one’s.
