Sticky Buns

A sweet treat, great to serve after Sunday lunch, or packed in a lunchbox…
Ingredients
1 1/2C Rice Flour
1/2C Potato Starch
1C Tapioca Starch
4tsp Baking Powder
1tsp Xantham/Guar Gum
1tsp Salt
2T Granulated Sugar
4 Small Eggs, or 3 Large ones
2/3C Oil
1C Milk
2T Melted Butter
1/2 - 1C Cinnamon/Sugar Mixture
Method
Mix dry ingredients well, add the eggs, oil, and milk. Stir well in a large bowl. Spray a 20 inch long piece of wax paper. Scoop dough onto the wax paper and with wet or oiled hands spread the dough into a 10 x 14 inch rectangle. Drizzle the melted butter over all and sprinkle with the cinnamon/sugar mix.
Lift the long side of the wax paper and the dough will start to roll over. Continue to roll up, then slice with a wet knife into 12 round pieces. Place on the baking tray and bake at 375oF for 18 mins. While still warm out of the oven, drizzle with icing sugar.

try this recipe as list but put extra 1cup of potato flour and still the dough is still sloppy so trying to cook in muffins tins
i wonder if the liquid amounts are correct!
will comment later if the muffin tins idea turns out! as they are still cooking
