Sultana Muffins

Ingredients
1 1/4C Cornflour
1 1/4C Soya Flour
2t Baking Powder
1/2t Cinnamon
1/2C Sugar
1 1/2C Sultanas
3T Butter, melted
1 Egg
1C Milk, or milk alternative
Method
Sift flours, baking powder and cinnamon into a medium bowl. Mix through sugar and sultanas. Combine butter, egg and milk and lightly mix liquid ingredients into dry ingredients. Spoon mixture into lightly greased muffin tins. Cook in a moderately hot oven, 190oC, for 25 minutes or until golden brown.
