Trail Mix

Ingredients
1/2C Cashews
1C Almond slices
1C Walnut pieces
1/2C Pecan Pieces
1/2C Dates, diced
2T Honey
2T Rice Bran
1C Raisins
3/4C Shredded Coconut
1/2C Apricots, diced
Method
In a food processor, process cashews to small pieces, but not powder. Place a bowl. Process almonds, walnuts, and pecans, one at a time into small pieces. Add the honey and rice bran to the mixture and combine. Transfer to a greased or lined baking tray and spread the mixture out evenly. Toast in a 150oC oven for 20-30 minutes or until lightly browned. Return to the bowl and add the raisins, coconut, apricots and dates. Stir to combine and allow to cool.
You may also like to add sunflower seeds, pumpkin seeds, seasame seeds, currents, dried apples, dried pears or dried pineapple in any combination.
