Tropical Cream pie

This is divine! It is an old recipe that I got out of one of my Grandmothers old cookbooks. It is really easy to make and tastes wonderful.
Ingredients
175g Arnotts Rice Cookies
75g Butter
1 pack lemon jelly (check to make sure it is gf)
1 1/4 cup boiling water
250g tin reduced cream
450g tin crushed pineapple
Method
Crush or use blender to make pie base with cookies and butter. Press into flan or pie dish and place in fridge.
Dissolve jelly in boiling water and allow to cool and refrigerate until it starts to set. Beat mixture until it is fluffy then gently fold in the reduced cream and drained pineapple.
Pour mixture into the chilled pie crust and allow to set.
