Warm Thai Beef Salad

Ingredients

1 Red Chilli, seeded and minced
2T Black Pepper
1t Grated Lime zest
500g lean Beef Steak
1T Butter
250g Shitake Mushrooms
250g Oyster Mushrooms
1/4C Chicken or Veg Stock
1 Lime, juice
1T Fish Sauce
1/2 Cucumber, sliced
4 Spring onions, sliced
1C Fresh Thai or Sweet Basil leaves, chopped
1/2 Fresh Mint leaves, chopped
Fresh Coriander leaves to garnish

Method

Place chilli, pepper and lime zest in a mortar and grind to form a coarse paste. Rube paste over meat. Brown meat under the grill 1-2 mins on each side; beef should be rare. Allow to stand 10 mins before slicing thinly.; set aside. Heat butter in a wok over medium heat, add mushrooms and stir-fry 5 mins. Add stock, lime juice and fish sauce, bring to the boil then remove from heat. Mix all ingredients together and garnish with coriander leaves.
