White Chocolate and Mint Mousse

Delight your guests with this quick and easy dessert..

Ingredients

250gm White Chocolate
250mls Cream (double)
1 Egg White
1/4 tsp Peppermint Extract
6 Mint Leaves

Method

Melt chocolate in a double boiler and cool. Whip the cream, egg white and essence together until soft peaks form. Add a dollop of cream to the chocolate and mix together to loosen it. Gently fold chocolate mixture into the cream. Spoon into 6 glasses and chill in fridge or freezer for 10-15 mins. Serve decorated with mint leaves
