Best flour mix for bread.

I’m having a terrible time trying to make gluten free bread..
Does anyone have some tips on what flour mix is best?

Try www.goodnessme.co.nz and see if any of their bread mixes appeal. We thought they were not too bad - it was nice straight out of the oven and makes a decent sized loaf. Good luck!

Hi FloraFlo,
I’d recommend Elocin Specialty Foods White Rice or Buckwheat Bread Mixes. Easy to make up, either in a tin in the oven or in a bread-maker. You can add any seeds and nuts you like to vary things. Also great for pancakes and piklets.

You can use all sorts of flours but I’ve had the most success with a mix of Buckwheat, Tapioca, and one other - either rice, brown rice, or whatever else I have on hand. Also important for something like bread is xanthun (sp) gum or Guar gum - 2 good floury products to add to breads cakes etc to replace gluten and help them hold together.
If your recipe allows it, a little oil helps to keep it moist.

Try using Laucke bread mix (just add water)
Works every time and works out at $4.50 a loaf.

If you don’t mind buying a bread mix, I’ve found that the healtheries recipe for yeast-free bread is great.

It’s one of the few GF breads I’ve found that’s actually nice to eat untoasted, and because you don’t use yeast, it’s a lot quicker to make. You might need to play around with the temp a bit to stop the top from over cooking, and try having ~ a cup of water in a pan in the bottom of the oven to keep the top crispy.
