I would say salami would be much like any processed meats - you have to check ingredients in them all - Hellers and a few other manufacturers have been kind enough to put GF label on products (in chiller at supermarket)... I do know that you do have to be careful with processed meats though :(

after my 18mth old grandaughter was diagnosed recently with caeliac she had an emergency trip to hospital. As they were going to give her paracetamol liquid we asked if it was gluten free.It took them an hour and a half of internet, phone calls to emergency chemists and finally rang the pharmaceutical company who also had to do homework before they agree it was glute free
