Brown Rice & Spinach Casserole

Delicious casserole made with pre cooked rice and frozen spinach.


1 cup cooked rice
10oz frozen spinach
1/4 cup diced onion
1/2 cup diced mushrooms
4oz cheddar/tasty cheese
1/3 cup skim or soy milk
2 eggs
1/4 cup chicken stock
1tbsp worcester sauce
1/2 tsp ginger
1 tsp ground mustard
1 tsp pepper
Salt to taste


Thaw spinach and squeeze water out - leave in colander to drain.  Beat eggs and grated cheese and set aside.
Heat 1/2 of chicken stock in a pan, add onions and bring to a simmer and allow stock to nearly evaporate add onions and cook until they are brown (dont burn).
Add other 1/2 of stock and mushrooms, lower heat and also allow to nearly evaporate - remove.
Combine all in baking tray and bake for 35-40 mins at 325 deg.
Can be served with a salad.

Mushrooms are optional.
