Curried Fish Chowder

Delicious and healthy way to eat fish and apparently tastes better next day (if you have any left of course)


2 tbsp Olive Oil
1 large onion
2 stalks celery
4 carrots
2 cloves garlic
2 tsp fresh ground ginger
1 tsp curry powder
4 cups vegetable broth
2 cups finely chopped potato
2 cups tinned chopped tomato
500gm white fish
1 cup peas
1 cup flat leaf parsley
Salt and black pepper


Heat oil in a pan and add onion, celery and carrots and cook 5 mins.
Add garlic, ginger and curry powder and simmer another 2 mins., then add broth, potato and tomatoes and bring to boil (uncovered)  Simmer 15mins.
Then add fish, peas, parsley and salt & pepper.
